It is a beautiful thing to convert to Orthodoxy. It would be very interesting to know what finally convinced you to become Orthodox. As for fasting, the best thing you can do is to speak to your parish priest, as some churches have different ideas as to what constitues "minimum rules". The "maximum" rules, however, can be found in the first hymn of the day, in the first week of lent, in the Pre-Sanctified Liturgy:
" While fasting with the body brethern, let us also fast in spirit. Let us loose every bond of iniquity. Let us undo the knots of every contract made by violence. Let us tear up all unjust agreements. Let us give bread to the hungry and welcome to our house the poor, who have no roof to cover them, that we may receive great mercy from Christ our God".
